Does the Hand history from PokerCraft show whether a player is sitting out?

Sitting out is not shown in a Hand Moment.

The only way for you to guess whether a player may have been sitting out is to view each hand history in each table session one by one to check whether the hand was folded hand after hand. However, please note that this method is not a 100%fool-proof way of checking whether a player was in sit-out mode.
